Sugar Free Vanilla Cupcakes with Vanilla Frosting Recipe

This recipe for Sugar-Free Vanilla Cupcakes with Vanilla Frosting will add a touch of magic to any day. Vanilla has a subtle, sweet, creamy flavour with an amazing aroma. Using Natural Sweeteners, this recipe gives you the delicious flavour of vanilla without adding as much sugar as other cupcake recipes.


Vanilla Cupcake Ingredients


•     1/2 cup (1 stick) butter, softened
•    3/4 cups sweeteners
•    1/2 tablespoon baking powder
•    1/4 teaspoon salt
•    2 large eggs
•    1/2 cup milk
•    1 teaspoons vanilla extract
•    1 1/3 cups all-purpose flour


Method

1. Preheat the oven to 350. 
2. Use paper liners to line 12 regular-size (2 1/2-in. diam.) muffin cups. 
3. In a large bowl, beat butter, Natural Sweetener, baking powder, and salt on high speed for one minute, or until thoroughly combined. Add eggs and beat until frothy, about 2 minutes. Beat in milk and vanilla on low speed until batter looks curdled, then incorporate in flour just until combined. 
4. Fill each muffin cup to about two thirds full by spooning a scant 1/4 cup into each one. 
5. Bake the cupcakes for 20 to 25 minutes, or until a wooden pick inserted into the center comes out clean. Let cool for five minutes in the pan on a wire rack before transferring it to the rack.
6. Apply the remaining batter and repeat steps 3 and 4. Allow cupcakes to cool fully before frosting and decorating.
7.  Unfrosted cupcakes can be frozen in an airtight container for up to a month, or covered and kept at room temperature for up to a day. Prior to icing, thaw. They can be kept in the refrigerator for up to two days after they have frozen and cooled, very loosely covered.


Vanilla Buttercream Icing Ingredients

•  1 cup unsalted butter (2 sticks or ½ pound), softened (Texture should be similar to ice cream).
•  3-4 cups sweeteners 
•  ¼ teaspoon table salt
•  1 tablespoon vanilla extract
•  4 tablespoons milk/cream

Method

1. Using a mixer fitted with the paddle attachment, beat butter on medium speed for a few minutes. 
2. Once the Icing Sugar has been combined with the butter, add 3 cups of Natural Sweeteners Icing Sugar and run your mixer on the lowest speed (to avoid blowing everywhere). 
3. Turn the mixer up to medium and beat for three minutes after adding the vanilla essence, salt, and two tablespoons of milk or cream. 
4. Add the remaining sugar if your frosting needs to have a stiffer consistency. 
5. Add the remaining milk, one tablespoon at a time, if your frosting needs to be thinner
